Trying not to whinge… and zucchini slice

I’m limiting how much media I see/hear these days, because it’s all just too much.

The cleanup goes very slowly.  Mr Beloved, I may have mentioned, has Aspergers.  Which means he finds disruptions to routines quite difficult, and other people very stressful.  It also means he doesn’t delegate well, so I’m kind of stuck doing what I can around the edges – making sure he rests, gets a good meal, in a clean(ish) house.

I made zucchini slice again today (because one of the few veges we could get at the supermarket was zucchini!) It’s a (slightly modified version) of this recipe.

I have to use our biggest saucepan to mix it! (Note the small ball of fluff by my feet – Miss Constance J. Woodle helping Mum in the kitchen, as ever.)

Yum.  It’s quite a flexible recipe – and a good way of getting stealth veges.  There’s no way we’d eat 4 zucchinis in 3 or 4 meals otherwise, but with this? Doesn’t even TASTE like zucchini.  Add I always use 2 carrots,  to add even more stealth veges…

Looks like we should be able to get fuel tomorrow.  I was so very grateful to get milk and bread yesterday – you really don’t realise how much you rely on those supplies to just BE there, until they aren’t.  The supermarket had many bare shelves – cleaning products, toilet paper, and pet food were missing too.  But supplies are starting to get through to Toowoomba – there are a lot of flood affected towns and regions who are still cut off.

So – I’m trying not to whinge.  But there’s still so damn much to do. My joints are quite inflamed, which doesn’t help my mood or my ability to get stuff done.

    I just had stealth chicken pasta sauce with zucchini carrot and celery!! It’s a good way to disguise things even from oneself!!
    Good luck as you soldier on with the clean up. It’s survivors’ guilt I think. It is so nice to be able to have the necessities of life, which seem like luxuries when you miss out.

      Yum, the stealth vege pasta sounds good!
      I also feel guilty because I\’m just so damn tired all the time, no energy to help. Damn fibro!
